Margarita Chicken: Slow Cooker Recipe

I think we could all agree that Margaritas are delicious!  Whether you like them "leaded" or "unleaded," this recipe is for you!  Because it's summer, at any given time you can pretty much find some sort of Margarita Mix on sale.  I did, and that's how this recipe came to be!

This chicken was super yummy!  We served ours in soft taco shells, but it would be equally as delicious on top of nachos or even rice.  You can serve it with whatever toppings your family likes.  We had ours with salad, but it would also be great with some spanish rice or beans.

Just wait till you see how easy this is!!  I'm excited for you to try it!

Margarita Chicken

Ingredients: (I used my 3 Quart Slow Cooker for this)

1.5 lbs. boneless skinless chicken breasts (I used tenders since I had them)
1 yellow pepper, sliced into strips
1 onion, sliced into half rings
1 cup Margarita Mix (mine was alcohol free, but please feel free to use the one with tequila in it!)
1 Tbsp. garlic powder
1/2 tsp. cumin
1/2 tsp. salt

Directions:
Place the chicken in the bottom of your crock.  Add in the yellow peppers and onions.  In a bowl (or measuring glass) mix together the margarita mix, garlic powder, cumin and salt.   Pour it over the chicken, onions and peppers. Cook it on LOW for 6-7 hours, or on HIGH for 3-3.5 hours. Take the chicken out and shred it. Place the chicken back in the juices and mix it up. Enjoy!

Wow !!! What a wonderful idea. I never would of thought to put chicken and a margarita mix together. I am going to try this as soon as I get a place to live. I'm currently homeless but someday this will be on my dinner table. Thank you so very much.
