I'm all about easy "two bowl" desserts that come together in a snap. And this sweet and simple recipe is just that. These Oatmeal Raisin Cookie Bars are a delicious treat inspired by the Oatmeal Cookie. The bars are crisp on the outside with a moist, chewy center. And with the sweet spices of cinnamon and nutmeg, these cookie bars will disappear as soon as they come out of the oven. So its a good thing that they take less than 40 minutes to make and bake. Because you very well might need to make a second batch. Feel free to substitute the raisins for chocolate chips, or sprinkle in some chopped nuts for some extra crunch!
Ingredients:
- 2 cups rolled oats
- 1 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 egg white
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 1/2 cup raisins
Glaze (optional)
- 1 cup powdered sugar
- 3-4 tablespoons water
Preparation: Makes 12 bars
- In a large bowl, mix dry ingredients (oats through nutmeg) and set aside
- In a medium sized bowl, combine sugars, egg & egg white and beat with an electric mixer until well incorporated
- Add canola oil & vanilla into sugar mixture & beat well
- Add wet ingredients into dry ingredients and mix until just combined
- Stir in raisins
- Pour batter into a well greased 9 x9 baking dish and bake at 350 for 25 minutes
- To make the glaze, whisk powdered sugar & water together until mixture is smooth. You may need a bit more water to create the right consistency, so add water one tablespoon at a time until you reach a glaze that drizzles well
- Drizzle glaze over cooled bars and serve
