Orange Blossom Muffins

Nothing says breakfast like the quintessential glass of orange juice. But what about those of us who don't particularly love the sugary juice, but still want to start the day off with some Vitamin C? Well, these Orange Blossom Muffins are for you. They are bursting with citrus flavor and serve as the perfectly healthy start to your morning. But don't be fooled by the healthful ingredients. These muffins taste as sinfully delicious as a sweet cupcake. Apple sauce & yogurt replace more classic, higher fat ingredients like butter, yet give the muffins an incredibly moist texture. And the subtle spice of cinnamon offsets the sweet orange glaze that can be drizzled over the top of these perfect little breakfast cakes. It is the perfect recipe for a Mother's Day brunch or even a quick weekday breakfast. Enjoy!

Ingredients: Makes 12 Muffins

  • 2 cups all purpose flour
  • 2 tablespoons baking powder
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 6 oz vanilla nonfat yogurt
  • 1 egg
  • 1 egg white
  • 1/4 cup almond milk
  • 1/4 cup apple sauce
  • 2 tablespoons canola oil
  • zest from one navel orange (about 2 tablespoons)
  • 1 teaspoon vanilla extract
  • 1/4 cup orange segment, chopped into bite size pieces

For the glaze:

1/4 cup powdered sugar

2-3 tablespoons fresh orange juice

Preparation:

  1. In a large bowl, sift flour, baking powder, sugar, salt & cinnamon together; set aside
  2. In a medium bowl, whisk together yogurt, egg, egg white, almond milk, apple sauce, canola oil, orange zest & vanilla
  3. Pour wet ingredients into dry ingredients & mix well
  4. Fold orange segments into muffin batter until just incorporated
  5. Divide muffin batter into 12 muffin cups and bake at 350 for 18 minutes
  6. For the glaze, whisk powdered sugar with fresh orange juice and drizzle over cooled muffins

Can you use regular milk?

Absolutely. I like almond milk because it gives the muffin a nuttier taste, but regular milk is a fine substitute.

Yes, they are 150 calories per muffin
