Pumpkin and Apple Stuffed Pork Loin

A few weeks back, I bought several cans of Pumpkin and have been looking for something fun to do with them (besides pumpkin pie.)  My daughter and I made some pumpkin pancakes (which are delicious) and then I had the majority of the can left over.  Fast forward to my trip to the grocery store, in which boneless pork loin was on sale. Yay!  The two made for a happy marriage!

This was extremely delicious and extra flavorful!  Everyone in my family loved it and ate it.  That's always a good sign!

Although this may take a few extra minutes to put together, it is well worth it.  I promise, it really isn't that hard to make.  Don't be intimidated.  If you visit my blog, there are step by step pictures to accompany the instructions, so you know what it's supposed to look like every step pf the way!  

This would be something you could serve at your Thanksgiving gathering this year instead of the usual Turkey if you wanted to!  

Pumpkin and Apple Stuffed Pork Loin

Ingredients:
1 cup Canned Pumpkin
1 medium apple, peeled, cored and diced
1/8 tsp. Nutmeg
1/2 tsp. Cinnamon
1 Tbsp. Sugar
2.5 lb. Boneless Pork Loin
1/2 packet BBQ Pulled Pork Crock-Pot Seasoning Mix
1/4 cup water

Butcher's Twine

Directions: (I used a 3 Quart Slow Cooker)
In a bowl, mix place the pumpkin, apples, nutmeg, cinnamon and sugar and stir it up. Next, take your pork loin and slice it in half horizontally just enough so it lays flat and is still ONE piece! Slide 4 pieces of butcher's twine underneath your loin, evenly spaced. Spread your pumpkin and apple mixture over the top of your pork loin. It's time to roll it!  (It won't roll super tight and some of the mixture will ooze out.  It's ok!  You can just push it back on to the ends....it'll stick!) Now, tie the loin up those pieces of twine. Sprinkle half of the BBQ Pulled Pork seasoning on and pat it into the loin. Place your pork loin in your crock, seasoned side down and sprinkle the rest of the BBQ Pulled Pork Seasoning on this side.  Add the 1/4 cup of water. Cook on LOW for 7-9 hours or on HIGH for 3.5-4.5 hours. ENJOY!

Sounds good, I am going to have to try this, I also have some canned pumpkin I need to something with, I have missed your recipe's on here, hope you start posting some again

Thanks Liz! I post every week! I only missed 2 weeks ago because of a trip to Chicago. Sometimes my posts don't get "featured" accidentally, so therefore don't show up on the main page, but they are always here. You can search my name or the name of my blog and I"m sure you can find the recipes :)

As usual - looks soooo good! Only concern - pumpkin and the kids - not sure they'll like it with pork. Could I just do apple?
