Rib Bites Add Burst of Flavor to an Appetizer Table

City of Grosse Pointe Public Safety Lt. Eddie Tujaka shares a recipe he found in his mother's recipe book. It's a great dish to pass for upcoming holiday gatherings, he says.

The season for "bringing a dish," or trying to find something different for guests to nibble on at a holiday gathering is nearly upon us. To that end, we found a great recipe, compliments of Public Safety Lt. Eddie Tujaka.

"I found this recipe in my mother's recipe book," said Tujaka, who enjoys spending time in the kitchen.

The recipe is for rib bites--tasty little barbeque-seasoned, tender mouthfuls of pork. They are different, they are easy to make and they taste great. Here's how:

1. Get a four to five pound pork shoulder and cut it into strips about one inch wide by one inch deep. These will look like spare ribs (without the ribs).

2. Sprinkle the pork strips with Lawry's Seasoned Salt, onion powder, garlic powder and cayenne pepper to taste.

3. Bake these strips in a covered 13 x 9 inch pan at 350-degrees for about 30 minutes.

4. Remove from oven and cut them into bite-sized pieces, then pour your favorite barbeque sauce over the bites, tossinig them to cover all sides. Re-cover the pan and cook for another hour.

"The longer you cook them, the more tender they will get," Eddie said. "I'm always paranoid about them drying out, which is why I keep them covered in the oven."

These tasty rib bites also transport easily in the baking pan, and can be easily reheated in an oven. Try them; you and your guests will certainly like them!
