Reader Shares Summer BBQ Recipe; Loved by Family, Dinner Guests

A local woman shared her secret with Patch: She tweaked a Bon Appetit recipe to fit her family's taste.

Lynne and Dan Santoscoy love to entertain. Part of that involves creating great food experiences that adults and children alike can enjoy. As a parents of a soon-to-be fifth grader at in , the Santoscoys recently invited friends from the school and their Indian Village neighborhood to their home for a Fourth of July feast.

Part of that feast was pulled pork flavored by a wonderfully smooth yet tangy barbeque sauce created by Lynne Santoscoy.

“It’s basically a recipe from Bon Appetit, but I’ve changed it so that the kids will eat it, too,” she said. “I don’t use any of the onions, garlic or dried ancho chili that the recipe called for.”

But she does use the liquor.

Santoscoy’s version of the recipe calls for:

2 cups packed brown sugar

1 cup ketchup

1 cup tomato paste

1 cup whole grain Dijon mustard

1 cup water

½ cup Worcestershire sauce

½ cup apple cider vinegar

½ cup apple juice

1 tablespoon ground cumin

1 ½ cups bourbon

Now here comes the complicated part. Mix everything together, adding the bourbon last. Simmer the sauce on medium/low heat, stirring occasionally for at least 1 hour (this burns off the alcohol, but leaves the good flavor).

“For this batch I looked to see what we had in the house, and we didn’t have any bourbon,” Santoscoy said. “So I used Scotch. I’ve used tequila before, too – whatever we have around.”

Santoscoy said that she has often made double batches of the sauce, freezing what she doesn’t need right away for future use. It’s a great way to add a unique and amazing flavor to any barbeque all summer long!
