Fresh Farms Market Shares the Secret to its Amazing Pizza

A special cheese blend is the key to making your pizza nearly as good as what you can get at the Grosse Pointe market.

If you lived in Grosse Pointe and have a hankering for pizza every so often–and who doesn’t?–then you’ve likely tasted the pizza at on Fisher Road. While it’s a great market to frequent for its unique items, the real reason to walk in is for some of its homemade New York-style pizza.

“We probably sell 400 pizzas a week,” said Michael Swanson, the Market’s pizza department manager. “People love our pizza. On weekdays we sell about 50 a day; on weekends it’s probably 100.”

And with good reason. The crust is extra thin, but not crunchy, the sauce is flavorful but not too acidic. And the cheese. Whoa, the cheese. That’s where this story gets really good.

“We strive to use the best and freshest ingredients,” Swanson said. “Our secret ingredient is definitely our cheese. We use a special blend of mozzarella and provolone. We use Grande brand provolone, which is the best you can get.”

Where can you get Grande provolone? At most markets, including, of course, Fresh Farms Market. But don’t overdo it with the white stuff, Swanson cautioned. This is one of those cases where too much can be a bad thing.

“You don’t want too much cheese on the pizza,” he said. “You should still see a little bit of sauce through the cheese. That’s perfect.”
