A healthy & delicious recipe for Peanut Butter Chocolate Granola
Maintaining a healthy diet while working full time, spending time with loved ones and leaving some time for yourself can often be a challenge. And it seems the more hectic our schedules become, the more lenient we become with our nutrition. Stress can lead to overindulgence in comfort foods and those goals of health can quickly fly out the window. But I've found a compromise. A healthy snack, packed with nutrients, that satisfies any chocolate craving. This recipe for peanut butter chocolate granola includes some nutritious ingredients like chia seeds & flax seed that up the protein level without adding tons of fat and calories. I've found it is a great mid day snack to bring to work, but also serves as a delicious sweet treat after dinner. Enjoy!
Ingredients: Makes Four 1/4 cup servings
- 2 tablespoons peanut butter
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 tablespoon Nutella
- 1/2 tablespoon flax seed powder
- 2 tablespoons chia seeds
- 1 cup rolled oats
- 3 tablespoons mini chocolate chips

- In a large microwave safe bowl, mix peanut butter, honey, vanilla & Nutella and microwave for 20 seconds
- Stir in flax seed, chia seeds & oats
- Spread mixture onto a greased cookie sheet, allowing some small clumps to remain intact
- Bake at 325 for 7-8 minutes
- Before granola has cooled completely, toss with mini chocolate chips
