S'more Rice Krispie Treats

A no bake Fourth of July dessert recipe: S'more Rice Krispie Treats!

Fourth of July is upon us which means barbeques and bonfires will be cropping up everywhere you look this Wednesday. And nothing quite says summer like everyone's favorite bonfire treat: the S'more. But for those of us who may not be able to make it Up North this Holiday Week, there is an equally sweet alternative. The S'more Rice Krispie Treat. I took the classic Rice Krispie recipe and added chocolate chunks and graham crackers to create this incredibly simple dessert. It comes together in just a few minutes...and will surely disappear just as quickly. Happy Fourth of July!

Ingredients: Makes 16 squares

  • 3 cups large marshmallows
  • 2 tablespoons butter
  • 2 teaspoons vanilla extract
  • 2 cups Rice Krispie cereal
  • 2 ful Hershey's chocolate bars, chopped into bite sized pieces
  • 4-5 full Graham crackers, chopped into bite sized pieces
  • Cooking spray

Preparation:

  1. In a large microwave safe bowl, place marshmallows, butter and vanilla and microwave on high for 30 seconds
  2. Stir mixure with a spatula, and then microwave for an additional 30 seconds, or until butter has melted completely and mixture is fluid
  3. Pour cereal, chocolate & graham crackers into marshmallow mixture and stir until well combined
  4. Pour mixture into a well greased 9 x 9 inch pan and let sit for 30 minutes
  5. After mixture has cooled completely, cut into squares and serve
